Refrigerated Prep Counters & Saladettes

Refrigerated prep counters keep ingredients cold in two places at once: in gastronorm pans along the top, where staff build sandwiches, salads and pizzas, and in the storage cabinet underneath. This range covers prep counter fridges and saladettes from True Refrigeration, Williams, Atosa, Thermaster, Polar, FED-X, Glacian, SKOPE and AG, with one to four doors or drawers.

What to compare on a prep counter fridge

How the top pans are cooled. The open pans on top are the hardest part of a prep counter to keep cold. Williams Banksia and Jade models use a blown air well that moves chilled air across the pans. Glass lids, hood lids and sliding lids cover the pans between rushes.

Pan size and count. Tops are set out for 1/6 or 1/3 gastronorm pans. True Refrigeration prep tables, for example, run from 8 to 30 pans of 1/6 size, so the pan count tells you how many fillings or toppings stay on the line.

Storage below. Solid swing doors give the most shelf space for back-up pans, while drawer models put stock within reach without bending. Storage capacities here run from 88 litres to 702 litres.
